Spice Cake With Mocha Icing

Spice cake like mother used to make with a delicious mocha icing. Enjoy!
Ingredients
- ****SPICE CAKE**** shopping list
- 3/4 cup shortening(Crisco) shopping list
- 1 1/2 cups sugar shopping list
- 3 eggs shopping list
- 1 3/4 cups all-purpose flour shopping list
- 1/2 teaspoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 3/4 teaspoon nutmeg shopping list
- 1 teaspoon cinnamon shopping list
- 2 tablespoons cocoa shopping list
- 3/4 cup buttermilk shopping list
- 1 teaspoon vanilla shopping list
- 1 teaspoon lemon extract shopping list
- 1/2 cup chopped nuts, roasted shopping list
- ******MOCHA ICING****** shopping list
- 6 tablespoons butter shopping list
- 1 egg yolk shopping list
- 3 cups confectioners sugar shopping list
- 1 1/2 tablespoons cocoa shopping list
- 1 teaspoon cinnamon shopping list
- 1 1/2 tablespoons hot strong coffee shopping list
How to make it
- ********CAKE********
- Preheat oven to 350 degrees F.
- Grease & flour pans.
- Use 2 deep (8") pans for high layers, or 2(9") pans for thinner layers.
- Cream shortening and sugar.
- Blend in well beaten eggs
- Sift all dry ingredients together; add alternately with buttermilk.
- Blend in flavorings and nuts
- Pour into greased & floured pans.
- Bake for 30-45 minutes or until cake tests done
- ******MOCHA ICING******
- Cream butter, blend in egg yolk.
- Sift sugar, cocoa and cinnamon and add to the creamed mixture alternately with hot coffee.
- Beat until smooth.
