Ingredients

1 small wheel of Brie, cut into 4 wedges

1/2 lb. pistachios, finely chopped

3 eggs, beaten

1 cup flour

2 pints strawberries, cleaned and hulled

1 tsp. black peppercorns

1/2 cup balsamic vinegar

3/4 cup extra-virgin olive oil

1/2 cup honey

1 lb. mixed greens

Flour for dredging Brie

Oil to fry

Directions

Heat oil to medium-medium high

Coat brie in flour

Dip wedges in egg, then roll in pistachios

Pan-fry brie on all sides until golden brown

In blender, add 1 pint strawberries, peppercorns, vinegar, olive oil, and honey

Blend until peppercorns are lightly cracked and mixture is emulsified

Slice remaining strawberries

Plate greens either on one large serving platter or 4 individual plates

Sprinkle strawberry slices over baby greens

Place wedges of brie on top of greens

Dress with strawberry dressing
