Mixed Greens With Pistachio Crusted Brie And Strawberry Dressing

A refreshing salad of mixed greens and strawberries with a pistachio crusted wedge of Brie cheese atop covered with a great strawberry dressing
Ingredients
- 1 small wheel of Brie, cut into 4 wedges shopping list
- 1/2 lb. pistachios, finely chopped shopping list
- 3 eggs, beaten shopping list
- 1 cup flour shopping list
- 2 pints strawberries, cleaned and hulled shopping list
- 1 tsp. black peppercorns shopping list
- 1/2 cup balsamic vinegar shopping list
- 3/4 cup extra-virgin olive oil shopping list
- 1/2 cup honey shopping list
- 1 lb. mixed greens shopping list
- flour for dredging Brie shopping list
- oil to fry shopping list
How to make it
- Heat oil to medium-medium high
- Coat brie in flour
- Dip wedges in egg, then roll in pistachios
- Pan-fry brie on all sides until golden brown
- In blender, add 1 pint strawberries, peppercorns, vinegar, olive oil, and honey
- Blend until peppercorns are lightly cracked and mixture is emulsified
- Slice remaining strawberries
- Plate greens either on one large serving platter or 4 individual plates
- Sprinkle strawberry slices over baby greens
- Place wedges of brie on top of greens
- Dress with strawberry dressing
