Ingredients
  • 12 oz whole wheat elbow macaroni
  • 12.3-ounce package low fat silken tofu (Mori-Nu or similar)
  • 1 tbsp unsalted butter
  • 1 cup grated "old" cheddar cheese

Directions
  1. Cook the macaroni to al dente and drain, but keep hot.
  2. Puree the tofu until perfectly smooth.
  3. Pour into a large saucepan, add the butter and cheese.
  4. Heat, stirring often, over low heat until the cheese is thoroughly melted.
  5. Add the cooked macaroni to the sauce, stir together well and serve.

Have never tryed tofu--what is it exactly????


Tofu is a congealed soy milk product. it is very adaptable to most any recipe and a very good source of soy protein. it begs flavor though, and takes well to marinades. good cubed and fried or added to soups. try some, you won't be too amazed at first, but with a bit of creativity it can be a very good, tasty low-cal source of protein. i have a good recipe for a sandwich with steamed tofu and sauerkraut, kind of a tofu ruben sandwich my wife and i have eaten since we lived in san francisco in the late sixties. we kinda stole the recipe from a vegetarian cafe called "shandygaff" on polk street i believe. don't know if it is still there or not. but i remember they used to have some darn good food. maybe i should submit the recipe.

I have never tried tofu either. I have kids with alergies and need them to eat better ( even though I choose not too).
