Ingredients

How to make it

  • Preheat oven to 350
  • Spray 9 in. pie plate with cooking spray
  • Beat potatoes, egg whites, and flour with hand mixer until smooth.
  • Put into pie plate
  • Bake for 15 minutes
  • Put brown sugar and butter in small microwaveable bowl
  • Heat on high power for about 20 seconds, or until melted
  • Remove potatoes from oven
  • Sprinkle pecans over potatoes
  • Drizzle sugar mixture over pecans
  • Return to oven and bake 15 minutes more

    I'm curious why the mix of fresh, roasted sweet potatoes and "canned"? The canned stuff seems like it should be taken out of the recipe :-)
