Mashed Sweet Potatoes With A Pecan Crust

- 3 1/2 cups cooked sweet potato, about 2 medium potatoes.(I roast them but they can be boiled or baked) shopping list
- 1 large can sweet potatoes, drained shopping list
- 4 egg whites shopping list
- 2 tbls. flour shopping list
- pecan Crust shopping list
- 1/3 cup brown sugar, firmly packed shopping list
- 2 tbls. butter shopping list
- 1/3-1/2 cup chopped pecans shopping list
How to make it
- Preheat oven to 350
- Spray 9 in. pie plate with cooking spray
- Beat potatoes, egg whites, and flour with hand mixer until smooth.
- Put into pie plate
- Bake for 15 minutes
- Put brown sugar and butter in small microwaveable bowl
- Heat on high power for about 20 seconds, or until melted
- Remove potatoes from oven
- Sprinkle pecans over potatoes
- Drizzle sugar mixture over pecans
- Return to oven and bake 15 minutes more
