A bucketful of fresh tomatoes and a handful of basil Egg and tomato pie Recipe

How to make it

  • Place tomatoes in roasting dish at 325 F
  • sprinkle with good o;ive oil and kosher salt
  • roast for 20 minutes
  • --------------------------------
  • line a large pie dish with pastry sheets
  • bacon if and as desired
  • letting the tomatoes cool for 5 minutes place them in pie
  • add spinach
  • pour the egg/cream mixture around them
  • add herbs, cheese and salt and pepper
  • Bake until golden brown Serve piping hot from oven
hot from the oven   Close
