A bucketful of fresh tomatoes and a handful of basil Egg and tomato pie

- 6 organic vine=ripe tomatoes with tops on shopping list
- olive oil shopping list
- kosher salt shopping list
- pastry sheets. shopping list
- bacon (optional) shopping list
- baby spinach cleaned and blanched shopping list
- 10 eggs whisked with pint of cream shopping list
- bay leaves fresh torn shopping list
- fresh thyme shopping list
- 2 chopped spring oniions shopping list
- few slices of blue brie cheese shopping list
- salt and pepper shopping list
How to make it
- Place tomatoes in roasting dish at 325 F
- sprinkle with good o;ive oil and kosher salt
- roast for 20 minutes
- --------------------------------
- line a large pie dish with pastry sheets
- bacon if and as desired
- letting the tomatoes cool for 5 minutes place them in pie
- add spinach
- pour the egg/cream mixture around them
- add herbs, cheese and salt and pepper
- Bake until golden brown Serve piping hot from oven
