Ingredients

6 organic vine=ripe tomatoes with tops on

olive oil

kosher salt

pastry sheets.

bacon (optional)

baby spinach cleaned and blanched

10 eggs whisked with pint of cream

bay leaves fresh torn

fresh thyme

2 chopped spring oniions

few slices of blue brie cheese

salt and pepper

Directions

Place tomatoes in roasting dish at 325 F

sprinkle with good o;ive oil and kosher salt

roast for 20 minutes

--------------------------------

line a large pie dish with pastry sheets

bacon if and as desired

letting the tomatoes cool for 5 minutes place them in pie

add spinach

pour the egg/cream mixture around them

add herbs, cheese and salt and pepper

Bake until golden brown Serve piping hot from oven
