Last Nights Quickie Chicken Curry

- Four skinless boneless chicken thighs shopping list
- olive oil shopping list
- 3 stalks celery, chopped shopping list
- 1 medium onion, chopped shopping list
- 5 cloves carlic, chopped shopping list
- 1 heaping tablespoon curry powder shopping list
- 1 can chicken broth shopping list
- 1/3 cup sour cream shopping list
- salt and pepper shopping list
How to make it
- Cut chicken thighs into six pieces each, season with salt and pepper, brown in two batches in fry pan, do not crowd,set aside
- in same pan cook seasoned onion and celery until translucent
- clear a place in middle of pan and add curry powder and stir until fragrant, mix into vegetables add garlic and add chicken broth to just cover vegetables
- cook on slow boil for 20 minutes
- add chicken meat to curry sauce and cook additional 30 min adding chicken broth if needed
- remove from heat and stir in sour cream
- serve over rice with cucumbers and sour cream as side dish.
