Sirloin Gorgonzola Pasta

- 1 tbsp. oil shopping list
- 8 oz. Top sirloin grilling steak shopping list
- 2 onions, sliced shopping list
- 2 cups sliced mushrooms shopping list
- 2 tbsp. flour shopping list
- ½ tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 1 ½ cups milk shopping list
- 5 cups rigatoni pasta shopping list
- 3 oz. gorgonzola or blue cheese, crumbled shopping list
- 1 plum tomato, seeded and chopped shopping list
- ½ of a sweet yellow pepper, diced shopping list
- 1 green onion, sliced (or 8 chives, chopped) shopping list
How to make it
- In a large nonstick skillet, heat oil over medium-high heat; fry steak, turning once, until browned outside and medium-rare inside, 8 to 10 minutes. Transfer to cutting board; cut across the grain into thin strips. Cover and keep warm.
- Add onions and mushrooms to pan; cook, stirring often; until no liquid remains, about 8 minutes. Sprinkle with flour, salt and pepper, cook, stirring for 1 minute.
- Whisk milk into pan, bring to boil. Reduce heat and simmer, stirring often, until thick enough to coat back of spoon, about 5 minutes.
- Meanwhile, in large pot of boiling salted water, cook pasta until tender but firm, 6 to 8 minutes. Drain and return to pot. Add sauce and cheese; toss to coat. Transfer to serving bowl. Top with reserved steak; sprinkle with tomato, yellow pepper and green onion. Toss to serve. Serves 4
