These tacos are a copy of the soft tacos featured at the California State Fair. It has taken years to get enough information to get the recipe within about 99%. These have a great taste from cooked lettuce and peppers and chilies. Enjoy.

Ingredients
  • 2 LBS. HAMBURGER
  • 1 HEAD ICEBERG LETTUCE
  • 1 YELLOW ONION
  • 2 REGULAR POTATOES
  • 2 TEASPOONS GRANULATED GARLIC.
  • 2 SMALL CANS DICED GREEN CHILIES
  • 1 BELL PEPPER
  • 1 1/2 TEASPOON SALT
  • 1t GROUND BLACK PEPPER
  • CORN TORTILLAS
  • VICTORIAS TACO SAUCE
  • This makes a lot. The recipe is easy to cut in half.

Directions
  1. 1. Peel, cut potatoes and boil. Once cooked, chop into small pieces about 3/8 inch. Set aside.
  2. 2. Cut head lettuce in half. Using sharp knife shave lettuce as thin as possible. Once cut into strips, cut into 1 inch long pieces. Set aside.
  3. 3. In a deep pot add 1 cup water then add hamburger breaking it up as added. As hamburger cooks use a wisk to stir breaking up hamburger into BB size pieces. Let hamburger cook. Once cooked, drain.
  4. 4. Once drained place in a large fry pan. Add 1 1/2 cups water. Add salt, pepper, granulated garlic and mix well. Add chopped onions, chilies, green pepper, stir and mix well. Allow to cook 10 minutes on medium high.
  5. 5. Add potato, stirring and mixing well.
  6. 6. Add lettuce, stirring and mixing well. Add another cup of water, mixing well and allow to cook 10 minutes. .
  7. 7. To cook tortillas barely rinse one side under water. Place on a Styrofoam plate and microwave 12 seconds (1300 watts).
  8. 8. Add meat and sauce and roll up. You have to hold one end pinched closed so it doesn’t fall out.
  9. 9. For a variation add shaved lettuce on meat and sauce.
  10. 10. The taco best suits thin sauce. I pour out half of the sauce and then add water and shake.

The stand is always in the same location. It says "soft tacos" and they cost about $2.25. I will be there to buy them also. Every year. Good for you. JJ

Hey gold - what a recipe. I just love it. Good job. I love the way the recipe reads. Our state fair is in Little Rock Arkansas. Don't know if they have these kinds of taco but I sure will check. I'll make some for me and the husband. We are both mexican food lovers.

Hello, we're making your tacos on Thuraday night. Sweet stuff and I are hosting a dinner party for women here at my house. I am sure the girls will love them.

Hi there - we had our dinner party which was a big success. We had 8 women and a good time was had by all. The girls loved the tacos. I am use to the taco seasoning taste and it look me a couple of bites to really appreciate the tacos. But it was a big hit. Most of the girls said they liked to fix their tacos that way. I am going to use flour tortillas next time.

But thanks and wanted to thank you as it was a good conversation piece to discuss how the tacos were made and where the recipe came from.

This looks really good...Mexican comfort food...meat and potatoes! Love the corn tortillas...usually nuke tortillas in a very damp paper towel to soften. Bookmarking!

Sounds really good, but I didn't see the granulated garlic in the directions, only in the ingredient list. When do I add that?
