CORN AND CRAB BISQUE Recipe

Ingredients
  • 1/4 cup chopped onion
  • 1/4 cup butter
  • 2 Tbsp flour
  • 1/4 tsp curry powder
  • 4 cups milk
  • 1 cup heavy cream
  • 4 cups fresh or frozen corn
  • 1 pound crab meat
  • Salt and pepper to taste

Directions
  1. Sauté the onion in butter.
  2. Add flour and curry powder and cook for 2 minutes.
  3. Chop corn in food processor, add to onion mixture and cook 5 minutes.
  4. Add milk, cream, salt and pepper and bring to a boil.
  5. Stir in crab meat.
  6. Serve hot.
  7. Optional: Top with crumbled bacon.
  8. Serves about 10.
