Pecan Crusted Chicken Recipe


PECAN CRUSTED CHICKEN Recipe
This is a great comfort food that is very tasty. It pairs very well with my Flirty Fresh Sexy Salad. It is a simple dish with an elegant taste that is sure to impress.

Ingredients
  • 1 cup Buttermilk (okay, I use whole buttermilk)
  • 1 egg, lightly beaten
  • 1 cup flour (may substitute Bisquick)
  • 1 cup ground pecans
  • 1/4 cup sesame seeds
  • 1 Tbsp paprika
  • 2 tsp salt
  • 1/8 tsp pepper
  • pinch cayenne (optional)
  • 8 chicken breast halves, 6 oz. each
  • 1/2 cup melted butter (do not substitute, and yeah, I use just a little more)
  • Handful of dried cherries, chopped (optional)

Directions
  1. Preheat oven to 350 degrees.
  2. Mix buttermilk and egg together in a shallow dish.
  3. Combine flour, pecans, sesame seeds, paprika, salt, pepper and cayenne in a medium bowl.
  4. Dip chicken in buttermilk mixture and then into flour mixture.
  5. Place chicken in ungreased casserole dish.
  6. Ladle melted butter evenly over each piece.
  7. Bake at 350 degrees until chicken is deep, golden brown, approximately 1 hour.
  8. When plating, top each breast with a sprinkle of chopped dried cherries (optional)
