Cheery Chewy Cherry Oatmeal Cookies Recipe

Ingredients

1/2 cup unsalted butter

1/4 cup brown sugar

1/4 cup white granulated sugar

1 large egg

1 tsp pure vanilla extract

1 Tbsp pure almond extract

3/4 cup all-purpose flour

1/2 tsp baking powder

Pinch salt

1 cup old-fashioned rolled oats (not instant)

1/2 cup shredded coconut

2/3 cup dried cherries (or cranberries, blueberries ...)

1 cup roughly chopped semi-sweet chocolate (or chocolate chips ... try white chocolate chips!)

Directions

Prehat oven to 350F.

Beat butter and both sugars together until light and fluffy and pale in colour. Add egg and both extracts and mix together until incorporated.

Sift flour, baking powder and salt together. Mix into batter along with oats, coconut, cherries and chocolate.

Mix well to incorporate all ingredients evenly.

* Chill batter for 1 hour.

Using a small ice-cream scoop, scoop batter onto a parchment-lined cookie sheet.

Bake for 15 to 20 minutes or until golden brown.

Makes 30 to 36 large cookies.
