TERESAS LETTUCE WRAPS Recipe
I had my first experience with Lettuce Wraps at an Asian restaurant and loved it so much I tried to recreate it at home. While I think this turned out great, I will gladly accept any variations!

Ingredients
  • 2 cups cooked rice (I prefer Jasmine)
  • 1 Tbs. olive oil
  • 1 Lb. ground pork or ground chicken
  • 1 bunch green onion
  • ½ tsp. chopped garlic
  • 2 carrots, shredded
  • 3 Tbs. Hoisin sauce
  • 2 Tbs. Soy sauce
  • 2 tsp. ground ginger
  • 1 tsp. sesame oil
  • ¼ tsp. hot chili paste
  • Loose Lettuce leaves
  • Cayenne Pepper to taste
  • Rice noodles
  • Water chestnuts, chopped

Directions
  1. Brown meat, drain.
  2. In separate pan, heat olive oil and sesame oil together and sauté onions, garlic and carrots.
  3. When carrots are tender, add Hoisin, soy sauce, chili paste, ginger, and red pepper to taste.
  4. Add cooked rice and water chestnuts.
  5. Wash lettuce leaves.
  6. Place large spoonful of cooked mixture in leaves, add rice noodles, roll live a burrito and eat!
  7. YUM!!
