Tzatziki Recipe
Light refreshing dip that goes perfect with toasted pita chips.

Ingredients
  • 1.5 C Strained Yogurt
  • 2 Medium Cucumbers (peeled)
  • Salt to taste
  • 4 Large Garlic Cloves (minced)
  • 4 T Olive Oil
  • Splash Vinegar
  • 4 Black Olives (sliced)
  • Dash Paprika.

Directions
  1. Grate cucumber or chop finely.
  2. Salt and squeeze out excess liquid.
  3. Add to minced garlic.
  4. Mix in vinegar and yogurt.
  5. Stir.
  6. Ad the oil.
  7. Sprinkle with Paprika.
  8. Garnish with chopped black olives.
  9. Serve with Pita or bagel chips.

This is one of my favorite recipes, but mine is a little diferent: instead of yogurt and vinegar, I use Quark Cheese and some dry oregano.

Alterations


i would substitute freshly squeezed lemon juice in lieu of vinegar.


I grate the cucumber on the rougher side, sprinkle salt over & let it stand for 20min, squeeze all the juice out, mix with Greek yoghurt or Bulgarian (they have the right consistancy), mint is a deft must in the hot weather with this dip
