Vanilla Scones

- 1 3/4 cups all purpose flour shopping list
- 3 tbs sugar (supposed to be vanilla sugar but I upped the vanilla extract instead) shopping list
- 2 1/2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/3 cup butter ( I used vegetable oil spread) shopping list
- 1 egg beaten shopping list
- 2 tsp vanilla extract shopping list
- 4 tbs Breyers Natural vanilla ice cream , MELTED but still cold shopping list
- 1 cup confectioners sugar shopping list
- extra Breyers Natural vanilla ice cream (about a tablespoon or two) shopping list
How to make it
- Sift together flour sugar baking powder and salt in a bowl
- cut in the butter until it resembles pea-sized crumbs
- in a smaller bowl beat together the egg and vanilla until smooth
- mix egg mixture with flour/butter mixture
- stir in the melted ice cream
- Mix together until dough forms
- form a ball and pat down on lightly floured surface making a thick, even circle
- cut the circle into 12 wedges then shape each wedge into a neat triangle
- bake in preheated oven at 400 degrees for about 10-12 minutes or until top is light brown and inside is done( I baked in a toaster oven since these are so cute and tiny)
- cool on a baking rack
- stir together confecioners sugar and the extra Vanilla Ice Cream a little at a time until it becomes a thick glaze. YOU MAY USE MORE OR LESS AS NEEDED UNTIL DESIRED CONISTENCY
- spoon glaze over cooled scones
- repeat last step a few times until scones are glazed nice and thick
