Uptown Chicken Kiev Recipe
This was a favorite in our house when the children were growing up. Good for children OR company, everyone loves this delicious dish. Serve with rice and use the wonderful sauce...EVERY BITE! (note: I always made mine without the chicken skin)

Ingredients
  • 2/3 Land o Lake Sweet Cream Butter
  • 1/2 cup fine dry bread crumbs
  • 2 Tbsp. grated Parmesan cheese
  • 1 tsp. each basil leaves & oregano leaves
  • 1/2 tsp. garlic salt
  • 1/4 tsp salt
  • 4 chicken cutlets
  • 1/4 cup dry white wine OR apple juice (either works)
  • 1/4 cup chopped green onion
  • 1/4 cup chopped parsley

Directions
  1. Preheat oven to 375 degrees.
  2. In heavy 2 qt. saucepan melt butter.
  3. Meanwhile, on piece of wax paper, combine bread crumbs, cheese, basil, oregano, garlic salt and salt.
  4. Dip chicken pieces in melted butter, then roll in crumbs to coat.
  5. Place skin side up in ungreased 10" baking dish. Bake near center of 375 oven for 45 to 55 min. or until golden brown & chicken is tender.
  6. Meanwhile, add wine, green onions and parsley to remaining melted butter (about 1/2 cup). Simmer.
  7. When chicken is golden brown, pour sauce mixture over and around the chicken. Return to oven for 3 to 5 minutes more or just until sauce is hot. Serve with the sauce spooned over.

Excellent recipe and I have used apple juice as a substitute for wine many times over. Our eldest daughter is allergic to alcoholic beverages and when she and her family come for a visit, I am ever so vigilant when preparing foods. Even though she is a vegetarian, she does enjoy fish and chicken occasionally and your recipe is absolutely perfect. Thank you for sharing your 5 fork winner!
