MIZITHROPITA- Greek Cheese Pie

Mizithra is Greek for the cheese ricotta salata- my favorite cheese of all time! A traditional Greek dessert that is served with Greek coffee at my house!
Ingredients
- 1/2 lb phyllo sheets shopping list
- 1/2 lb butter, melted shopping list
- 1 lb mizithra (ricotta salata) cheese (grated) shopping list
- 1/2 c sugar shopping list
- 6 eggs shopping list
- 1/2 lb honey (I use Attiki brand- very delicious!) shopping list
How to make it
- Combine cheese, honey and sugar until well blended.
- Beat eggs well and fold into the cheese mixture.
- Place eight individually buttered pastry sheets on bottom of 13x9 baking pan and pour cheese mixture in to the center.
- Spead with spatula.
- Sprinkle with cinnamon.
- Top with eight more individually buttered pastry sheets.
- Bake at 350 for 30 minutes.
- Let cool for 15 minutes.
- Serve.
