Chicken In Wine Is Fine

- 2-1/2 pounds small drumsticks and thighs, either skin on or skin and all fat removed - it's up to you. shopping list
- 2 Tbsp. olive oil shopping list
- 1 onion, quartered and chopped shopping list
- 1 celery rib, chopped shopping list
- 5 - 6 garlic cloves, finely chopped shopping list
- 1-1/2 cups dry white wine shopping list
- 1/2 tsp. salt shopping list
- Freshly ground black pepper shopping list
- 1 bay leaf shopping list
- 1 Tbsp. paprika shopping list
- a pinch of dried or fresh thyme (optional) shopping list
- fresh parsley for garnish shopping list
How to make it
- Heat Olive oil in a heavy pot ie. Dutch oven, over medium heat.
- Slowly brown chicken for 15-20 minutes on both sides.
- After browning the chicken, add onion, celery and garlic.
- Sprinkle with paprika.
- Add wine, salt, pepper, bay leaf and thyme to the pot.
- Bring to a boil, then cover and simmer.
- Cook until the chicken is very tender, 70-80 minutes.
- Always remove the bay leaf before serving.
- Serve with boiled potatoes, salad and a freshly baked loaf of bread.
