Baked Chicken with Bacon-Tomato Sauce

- 2c fire-roasted diced tomatoes shopping list
- 6 slices bacon shopping list
- 1(5-6lb) chicken cut in 8 pieces shopping list
- 3/4tsp salt,divided shopping list
- 1/4tsp fresh ground pepper shopping list
- 1 onion,cut into 1/3" slices shopping list
How to make it
- Preheat oven to 450. Spread tomatoes on bottom of 9x13" baking pan.
- Cook bacon in large non-stick skillet over med-high heat till crisp,about 8 mins.,turning once. Drain
- Season chicken pieces with 1/2tsp. salt and pepper Cook in skillet until browned and crisp,about 5 mins,turning as needed to cook evenly. Arrange chicken on tomatosauce. Bake uncovered,30-40 mins or till chicken is no longer pink in the center.
- Cook onion slices in bacon drippings until golden,about 8 mins. Transfer with slotted spoon to brown paper bag. Add remaining 1/4tsp salt,and shake to degrease onions,and mix with salt
- Transfer chicken to serving plate and sprinkle with reserved bacon and onions.
