How to make it

  • Preheat oven to 450. Spread tomatoes on bottom of 9x13" baking pan.
  • Cook bacon in large non-stick skillet over med-high heat till crisp,about 8 mins.,turning once. Drain
  • Season chicken pieces with 1/2tsp. salt and pepper Cook in skillet until browned and crisp,about 5 mins,turning as needed to cook evenly. Arrange chicken on tomatosauce. Bake uncovered,30-40 mins or till chicken is no longer pink in the center.
  • Cook onion slices in bacon drippings until golden,about 8 mins. Transfer with slotted spoon to brown paper bag. Add remaining 1/4tsp salt,and shake to degrease onions,and mix with salt
  • Transfer chicken to serving plate and sprinkle with reserved bacon and onions.
