How to make it

  • saute garlic in oil for 30 seconds
  • add tomatoes and half of parsley
  • reduce heat and simmer for 10 minutes
  • add shrimp and cook for 5 minutes
  • pour into 9 x 13 baking dish
  • sprinkle with cheese
  • bake at 400 for 10 minutes
  • sprinkle with remaining parsley, lemon juice and pepper

    I am drooling as I write this! It sounds so good. I like my shrimp quite tender, so putting it in the oven for 10 mins after cooking it for 5 won't make it tough? (Forgive me if my question sounds dopey, I mean no disrespect.) I am printing this off right now, as we have some shrimp in the freezer. Thanks for the great post. You have my 5.

    Hi Cmon68- I told you I would come back and post after I made your recipe-I just managed to waddle over to the computer after eating this super yummy dish! I've already added it to my favorites-I had to change a couple of things out of necessity-I was out of feta, so I used goat cheese, and I felt like I had to use tomatoes from the garden, as we are being overrun. Two weeks ago we were dying for fresh tomatoes, and now I can't use them fast enough! By the way-in the recipe, I assume the two cans of diced tomatoes were the 14 oz size?
