Ingredients

How to make it

  • Fry bacon until brown and crispy. Drain.
  • Strain grease, but do not discard.
  • Combine flour, cornmeal, salt, and peppers then add buttermilk and mix until just combined.(you can also dust tomatoes with this mixture before adding the buttermilk, then dip your tomatoes in batter---it helps it to stick)
  • Add 3T olive oil and bacon grease back to skillet and heat to medium high.
  • Dip tomato slices in batter and fry, a few at a time, in skillet for about 3 minutes on each side.
  • Drain and continue with remaining tomatoes adding olive oil if needed.
  • Combine mayonnaise and Tabasco and spread on bread.
  • Add 3 slices of bacon, lettuce and tomato slices to make sandwich.
  • *this is best done in a well seasoned cast iron skillet!*

    Due to the extreme heat and drought this year, my garden was a flop but I managed to get a few green roma tomatoes from a friend at work. They are not the preferred for frying and they were small on top of that but I have been anxious to try this recipe for a long time now and decided to go for it. We LOVED these! All of the flavors blend so nicely and the fried greens bring back so many fond childhood memories for me. It was like I was at grandma's house all over again. Thank you so much for sharing Keni! I am low on groceries and had to use hamburger buns because this was all I had but who cares about bread when there is green maters and bacon to be had :)

    Just for you, I made 'em again, this season...USUALLY, the fried green BLTs are done early in the season (before corn on the cob), then it's like illegal or somethin' to have BLTs without corn on the cob once it's ready, and it's just not quite right without the really yummy ripe maters...SO...I had to make this one in secret, just to get you the pic. ;)

    There can not be one thing wrong with this recipe! Love it! Except I had to use lard instead of olive oil and Miracle Whip instead of Mayo...Fabulous!
