I love making this cake in the autumn when the apples are fresh in the market or from the farmers field.

  • 2 cups apples - peeled, cored and diced
  • 1 tablespoon white sugar
  • 1 teaspoon ground cinnamon
  • *~*~*~*~*~*~*~*~*
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 1/4 cup orange juice
  • 2-1/2 teaspoons vanilla extract
  • 4 eggs
  • 3/4 cup chopped walnuts
  • 1/4 cup confectioners' sugar for dusting or make a thin icing to drizzle on top
  • 1 - 10 inch Bundt or tube cake

Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt or tube pan.
  2. In a medium bowl, combine the diced apples, 1 tablespoon white sugar and 1 teaspoon cinnamon; set aside.
  3. Sift the flour, baking powder and salt together and place to one side.
  4. In a large bowl, combine 1 cup white sugar, 1/2 cup brown sugar, oil, orange juice, vanilla and eggs.
  5. Beat at high speed until smooth.
  6. Stir in flour mixture and fold in chopped walnuts.
  7. Pour 1/3 of the batter into a prepared pan.
  8. Sprinkle with 1/2 of the apple mixture.
  9. Alternate layers of batter and filling, ending with batter.
  10. Bake in a preheated oven for 50 - 55 minutes, or until the top springs back when lightly touched.
  11. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
  12. Sprinkle with confectioners' sugar or an icing of confectioners' sugar mixed with a little orange juice and melted butter. I like to make the icing thin and watery.

I just made this and it is so good!!! I'm having it with a cup of coffee right now! Thanks for a great recipe! I hope you like my picture. The cake got stuck to my silicone bakeware because I didn't grease it. I didn't know you had to grease silicone! LOL!
