Ingredients

How to make it

  • Drop the pat of butter into a small hot frying pan
  • Lay the slice of bread in the butter
  • Break the egg into the centre of the slice of bread
  • With a fork, break the yolk and spread evenly over the slice
  • Add salt and pepper to taste
  • When the bread is toasted, turn it over and fry the egg side for 1 or 2 mins.
  • Try to resist that on an empty belly in the early morn campsite.

    I like to slobber the runny yolk all over the bread, but the basics are the same. The smell of the wood fire .... campfire coffee .... a hot cast iron skillet with bacon splattering in its juices ... a piece of bread toasted nearly black ... an egg ... a sudden downpour .... oops there goes the dream. Still, it can't be beat!!

    When I was young and went to summer camp, this is what the Counselors would make for us over the morning campfire. They'd actually cook these on the bottom of coffee cans. Thanks for the memory! I think I'll make these for my boys!
