Ingredients
  • 1 cup butter, softened
  • 2 cup sugar
  • 4 ea Eggs
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3 cup All-purpose Flour
  • 1 cup Buttermilk
  • 1 ea Meyer lemon rind, grated
  • 1 cup chopped pecans
  • ------------------------LEMON GLAZE------------------------
  • 1 x Juice of 3 Meyer Lemons
  • 1 cup sugar

Directions
  1. Preheat oven to 325 degrees.
  2. Cream butter and 2 cups of sugar. Add eggs, one at a time,
  3. beating after each addition. Sift together salt, soda and flour.
  4. Add to sugar mixture alternating with buttermilk.
  5. Stir in lemon rind and pecans. Pour into 2 greased and floured
  6. loaf pans. Bake for 1 hour.
  7. Lemon Glaze:
  8. While bread bakes, mix lemon juice and sugar. Stir until sugar
  9. is dissolved, making a glaze.
  10. After bread has baked, turn onto waxed paper and spoon glaze
  11. over top while bread is still HOT.
  12. EAT *wink*
