- Lower fat and calorie vegetable Medley shopping list
- 1 can of asparagus (or fresh cooked) the amount you chose. shopping list
- 1 small can tiny peas shopping list
- 1 cup brocolli crowns (optional) shopping list
- 1 cup fresh mushrooms shopping list
- 1 cup of chopped celery shopping list
- 1 cup of chopped green bell pepper (red adds great color & flavor also)! shopping list
- 1 cup of chopped onion shopping list
- 1 – 8 ounce container of low fat sour cream shopping list
- Mix the above ingredients and place in a large baking dish. shopping list
- (please drain all veggies, and save about 1/2 cup juice , your shopping list
- choice to add to the veggie/soup mix) shopping list
How to make it
- For the topping:
- 1/2 -(of 1) round RITZ crackers
- 1 package of slivered almonds (I toast mine for 1.5 minutes in microwave)
- 1 cup low fat sharp cheddar cheese
- (Another option is a cup of french fried onions on top, I use).
- Crumble the crackers and mix with the melted butter or margarine and the almonds. Sprinkle
- the topping mixture on top of the vegetables. Last sprinkle low fat cheese over all.
- Bake at 350 degrees for approximately 30
- minutes or until the casserole is bubbling and hot throughout.
- (* *note you may add 2 cups lean cooked chicken, or other lean meats (in large pieces) to this if for main dish* *)
