Wild Rice Casserole Recipe
My mother served this with beef tenderloin. It's really good, although it might sound kind of strange. The flavors mingle well.

Ingredients
  • 1 C cubed cheese--your choice. I use sharp cheddar
  • 1 14.5 ounce can chopped tomatoes with juice
  • 1/2 C chopped onion
  • 1/4 t pepper
  • 1 1/2 t salt
  • 1 C sliced black olives
  • 1 small jar mushrooms, drained
  • 1 C wild rice
  • Cook wild rice according to package directions. Mix all ingredients in a large casserole dish and pop in the oven at 350 until other ingredients are heated through. It sounds weird, but it's really tasty.

It doesn't sound strange to me at all, it sounds fabulous. Yummers, love a good rice casserole. Great post. You have my 5 and this is going on the dinner table Sunday with some grilled pork chops and a nice salad. Thanks for posting.

This looks really nice. i don't have an oven, so i might try this in the slow cooker.


I know Cheese+Rice=GOOD. Then adding Tomatoes, Olives and Mushrooms...YUMMY. :)


I forgot to say that I cook the wild rice in chicken broth instead of water. It really makes the flavor come alive. I skip the salt when I use chicken broth, though.
