Ingredients

2 Lbs ground chuck

1 can tomatoe paste {Small}

3 eggs

2 cups crushed saltine crackers

1/3 can rotel Small size

1/2 cup chopped fine {onion

1 Bell pepper Chopped fine

1 large can Italian tomatoes

1 Package {large} Monteray Jack cheese

Directions

Mix all ingredients together put in a 9x 13 pan cook 1 hour .After meatloaf is done sprinkle on PepperJack cheese. enjoy

Great recipe! Rotel is a staple where I come from- alas, even the milder version is too spicy for me...I always sub some canned mild green chiles, and a little extra tomato...Thanks for sharing Momo...=)
