Nabisco wafer cake

Ingredients
- 1 20cm chocolate cake layer shopping list
- 8-9 Nabisco wafer cookies shopping list
- 7 oz plain chocolate, melted shopping list
- 2 cups heavy cream shopping list
- 3 tbsp powder sugar shopping list
- 8 oz plain chocolate, melted shopping list
- chocolate topping: shopping list
- 8 oz plain chocolate, chopped shopping list
- 1 cup heavy cream shopping list
- 2 tbsp butter, softened shopping list
How to make it
- Place the chocolate cake layer into a loosed bottom cake ring in your serving platter.
- Use the melted chocolate to coat the Nabisco wafer cookies and chill in the fridge until set.
- Whip the heavy cream and the powder sugar until stiff peaks form. Fold in the melted and cooled chocolate. Chop the coated Nabisco wafers and fold into the cream and chocolate mixture. Spoon mixture over the cake layer and smooth top. Chill for 3-4 hours.
- Heat cream until simmering point and pour over the chopped chocolate. Stir until smooth and then add the butter and stir again. Leave to cool completely stirring occasionally until slightly thickened. Use to spread over the top and sides of the chilled cake. Decorate the sides with plain Nabisco wafers and chill for 1-2 hours.
