I have learned that when I do stock for freezing to pull off that fat and freeze. I know it's not that good for us.. But, once in awhile.. LOL

I save the cold fat I skim off my homemade chicken stock and use it as a base for white sauce and gravy. Perhaps I will try it for frying but I'm kinda partial to bacon grease. Every time I make bacon I strain and reserve the fat in jelly jars. It's great for frying up all kindas of things.

Aunt Ella made her sour cream orange cookies with this, my mother refused to eat them, I thought they were "the Best". With todays prices, we should learn not to waste so much. Good post!

As a child I had many jewish and german neighbors. This was always around. Soooo good! Its like a poor man's version of chicken stock for recipes. Works wonders for veggies.

Here in Germany they also have Schweineschmaltz (rendered pork fat) and Gänseschmaltz (rendered goose fat) generally spread on bread as an appetizer. I have never tried it. I have seen it with fried onions in it and sprinkled with black pepper.
