Dans Pork Roast In A Webber Kettle Recipe
More of a method than a recipe. a bit of experimenting will pay off in the long run, but follow the directions for fool proof results.

Ingredients
  • 8 pound blade end pork shoulder roast (Boston Butt)
  • 6-8 cloves garlic, slivered
  • montreal steak seasoning
  • 22" webber kettle grill (smaller will not work)
  • remote meat thermometer (i use a "polder" with good results

Directions
  1. EVENING BEFORE COOKING
  2. pierce roast in several places and push slivered garlic into holes
  3. rub outside of roast liberally with Montreal steak seasoning
  4. wrap tightly with plastic wrap and put into refrigerator overnight
  5. NEXT DAY
  6. take roast out of refrigerator 2 hours before cooking
  7. light a generous amount of charcoal and arrange grill for indirect cooking (put all coals around side of grill leaving center void of coals)
  8. insert probe of remote thermometer into roast, thickest part away from bone
  9. put roast in center of cooking grate and put cover on grill
  10. cook until internal temperature of meat reaches 170 degrees F, adding charcoal as needed
  11. let stand 20 minutes before slicing
  12. APPLE COMPOTE
  13. pare 6-8 fugi apples, place into 2 quart pot
  14. add a handfull of dried cranberries, a dash of cinnamon, pinch of kosher salt, and 1/4 cup crystalized ginger and 2 tablespoons of water
  15. simmer until done, mash with potato masher
  16. serve with roasted pork, make Dan proud!

How do you add more coals? Do you have to take the meat off, remove the rack and then add them? Can you just put the coals in or do they have to be hot? Probably stupid questions, but obviously I don't know the answers!


We bbq alot and this just got added to my recipes-sounds great! A 5!


Jcook.. all you have to do is drop the charcoal on top of the ones that are already burning
just lift the rack and drop them on top of the other ones.

one other thing i see i left out is to add a couple tablespoons of water to the apples before cooking them. it helps to have a bit of liquid to get them going.
