Easy Chilaquiles

This is a delicious variation of a popular dish served at home in Mexico. My wife & I 'tweaked' the original recipe until we came up this. Can Use Shreaded Chicken Instead of Ground Meats If You Like
Ingredients
- 1 lb lean ground beef or ground turkey shopping list
- 1/2 lb Ground italian sausage shopping list
- 2 Spigs of Fresh cilantro Finely Chopped shopping list
- 1 clove Garlic Chopped shopping list
- 1/2 Tsp Ground Corriander shopping list
- 1/2 Tsp tarragon shopping list
- 1/2 poblano chile Seeded & Finely Chopped shopping list
- 1/2 c Minced onion shopping list
- 1 14 oz can Spicy chili beans shopping list
- 1/2 c water shopping list
- 1 1/2 c frozen corn shopping list
- 1 14 oz stewed tomatoes shopping list
- 2 c tortilla chips Slightly Broken Up shopping list
- 1 c Shredded mexican cheese Blend shopping list
How to make it
- Brown Beef & Sausage & Drain
- Add Onion, Poblano, Garlic, Cilantro, Tarragon & Corriander
- Cover and Let Simmer for 5 min to 'Sweat' the Onions, Chile & Garlic
- Add Beans, Corn, Tomatoes & Water & Mix Well.
- Cover & Simmer on Medium Heat For 10 Min.
- Add Broken Chips, Stir Gently to Mix.
- Cook On Low Heat for 5 Min Or Until Water Is Absorbed.
- Sprinkle With Cheese
- Cook An Additional 2-3 min or Until Cheese Is Melted.
- Serve & Enjoy
