This is a delicious variation of a popular dish served at home in Mexico. My wife & I 'tweaked' the original recipe until we came up this. Can Use Shreaded Chicken Instead of Ground Meats If You Like

Ingredients
  • 1 lb Lean Ground Beef or Ground Turkey
  • 1/2 lb Ground Italian Sausage
  • 2 Spigs of Fresh Cilantro Finely Chopped
  • 1 Clove Garlic Chopped
  • 1/2 Tsp Ground Corriander
  • 1/2 Tsp Tarragon
  • 1/2 Poblano Chile Seeded & Finely Chopped
  • 1/2 c Minced Onion
  • 1 14 oz can Spicy Chili Beans
  • 1/2 c Water
  • 1 1/2 c Frozen Corn
  • 1 14 oz Stewed Tomatoes
  • 2 c Tortilla Chips Slightly Broken Up
  • 1 c Shredded Mexican Cheese Blend

Directions
  1. Brown Beef & Sausage & Drain
  2. Add Onion, Poblano, Garlic, Cilantro, Tarragon & Corriander
  3. Cover and Let Simmer for 5 min to 'Sweat' the Onions, Chile & Garlic
  4. Add Beans, Corn, Tomatoes & Water & Mix Well.
  5. Cover & Simmer on Medium Heat For 10 Min.
  6. Add Broken Chips, Stir Gently to Mix.
  7. Cook On Low Heat for 5 Min Or Until Water Is Absorbed.
  8. Sprinkle With Cheese
  9. Cook An Additional 2-3 min or Until Cheese Is Melted.
  10. Serve & Enjoy
