Cherylanns Special Chicken Recipe
This dish I like to serve when company comes. It may take a while to prepare, but it doesn't keep you tied up in the kitchen.

Ingredients
  • 8 boneless, skinless chicken breasts
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 cup butter
  • 1/2 cup white wine
  • 4 medium carrots, cut into 2" sticks
  • 2 (10 oz.) pkgs, frozen broccoli spears, cooked and drained
  • 1 can cream of chicken soup
  • 2 Tbsp. flour
  • 1 (4 oz.) can mushroom stems and pieces, drained
  • 1/2 cup sour cream

Directions
  1. Sprinkle the chicken breasts with salt and pepper. Melt butter over medium-high heat in a large skillet. Saute chicken until golden brown, about 15-20 minutes,turning occasionally. Pour wine over chicken. Add carrot sticks, lifting chicken so the chicken is on top of carrots. Reduce heat to medium-low; cover and steam for 45 minutes. 10 minutes before the chicken is done, cook broccoli according to package directions. Drain. remove chicken to a warm platter or serving casserole. Arrange carrots and broccoli alternately over chicken. Keep warm.
  2. Blend soup, flour, and mushrooms in a bowl. Add to liquid in the skillet, cook over medium heat until mixture has simmered for 3-4 minutes. Blend in sour cream and heat, but do not boil. Pour over chicken and vegetables. Serve hot.

Sounds great. I cook chicken breasts in a similar way, but with chicken broth instead of wine. Love carrots & broccoli, this is a winner.
