Welsh Rarebit Over Tomatoes And Toast Recipe

Ingredients

2/3 cup flour

1 tsp. salt

1/2 tsp. dry mustard

1/8 tsp. cayenne pepper

3 cups milk

3/4 tsp. Worcestershire sauce

6 tbls. butter

3 cups sharp cheddar cheese, shredded

2 tomatoes, thinly sliced

8 slices bread, toasted

Directions

Mix flour, salt, dry mustard and cayenne in mixing bowl

Add 1 cup milk slowly to form paste

Mix in rest of milk and Worcestershire sauce

Melt butter in double boiler

Slowly add milk mixture

Cook and constantly stir until mixture thickens

Slowly add cheese, stirring until melted

Put tomatoes on top of toast

Pour Rarebit over top of tomatoes
