How to make it

  • For Filling:
  • Cook sausage until done, crumbling as it cooks;
  • Cook chopped onions and garlic with sausage;
  • Drain any grease or fat from sausage/onion combo;
  • Mix cheeses and pizza sauce with sausage/onion combo and set aside (mixture should be thick).
  • For Puffs:
  • In a medium saucepan, combine water, butter, oregano, onion powder, and dry mustard; bring to a boil;
  • Add flour all at once, stirring vigorously;
  • Cook and stir till mixture forms a smooth ball;
  • Remove from heat and cool 10 minutes;
  • Add eggs, one at a time, beating well after each addition until smooth; stir in pepperoni;
  • Drop dough by well-rounded teaspoonfuls (you should get about 24 balls) 2 inches apart on a lightly greased baking sheet;
  • Bake in a preheated 400 degree oven for 25 minutes, or till golden and firm;
  • Cool, split in half, fill with sausage mixture.

    How the H*** did I ever miss this? Good grief, Charlie Brown, this would be perfect finger food. Dang....must make this soon. Fabulous. I love the puff part. It reminds me of the pate a choux I learned as a prep cook and only added French style stuff.......I never made the leap to pepperoni...more's the pity. I could certainly strut my stuff with this recipe under my belt. Wonderful!!!!!Times five.
