These buns are light, airy, with a definitive flavor of rice, combined with the goodness of whole wheat.

Ingredients
  • 1 pkg bakers' yeast
  • 1 cup warm water
  • 2 large eggs
  • 2 cups rice flour
  • 1 cup whole wheat flour
  • 1 tsp salt
  • 2 tbsp sugar
  • 3 tbsp olive or canola oil

Directions
  1. Prep the yeast in the warm water, and add about a teaspoon of sugar to feed the yeast
  2. Combine the rice flour with the whole wheat flour
  3. add the salt and sugar.
  4. Add the eggs, and stir in well to combine all ingredients
  5. Add the oil
  6. Add the yeast mixture after is has begun to work.
  7. Allow the dough to rest for ten minutes, covered with a damp cloth
  8. After resting, knead the dough, turning and folding gently. This dough does not require kneading to the smooth and blistered stage.
  9. Form dough into a ball and proof in warm place, covered with damp towel,until roughly doubled in bulk. Cover the dough ball with oil to prevent drying out.
  10. Shape your buns on an ungreased baking tray, and allow to rise until nearly doubled in bulk.
  11. Bake at 350*F until golden brown, and the rolls sound hollow on tapping.
  12. Allow to cool completely before removing from baking tray.

Hi, Elaine, baking yeast bread is certainly not one of my strengths, but you make this look easy. I love wheat anything and like to experiment w/ rice flour, SO looks like my husband is going to be a guinea pig soon! When I first started baking buttermilk biscuits from scratch, a staple in the South, my brother used to tease me and say that he was going to save them for hockey pucks! He doesn't say that anymore!
