- Crust: shopping list
- 1 cup butter, softened shopping list
- 1 cup + 2 tbsp castor sugar shopping list
- 3 eggs shopping list
- 4 ½ cups flour shopping list
- Method: shopping list
- Cream butter and sugar together until smooth. Add eggs one at a time followed by flour. roll the dough into balls and wrap in a cling wrap. Leave to chill in the refrigerator for 2 hours before rolling enough quantity to fit in a 20cm tart pan. shopping list
- Filling: shopping list
- ¾ cup sugar, divided into two equal parts shopping list
- 2 eggs, separated shopping list
- 1 ½ cup ground almonds shopping list
- ½ cup butter, melted shopping list
- 1 can pitted cherries, drained shopping list
- powder sugar for dusting shopping list
- apricot jam for glaze shopping list
- 2 tbsp chopped hazelnut shopping list
How to make it
- Whisk half of the sugar with the egg yolks until light and fluffy. Add ground almonds and slowly stir in melted butter.
- In another bowl whisk egg whites, adding the remainig sugar to form a stiff meringue. Quickly fold the meringue into the almond mixture.
- Arrange cherries at the base of the prepared tart shell and fill the shell with the almond mixture. Bake at 375F for 30 to 35 minutes. Dust the center with powder sugar. Brush edges with jam and sprinkle nuts over the edge.
