A butter-free cookie that's really satisfying. Rather like a meringue, this cookie is not nearly as fragile and really is chewy!

Ingredients
  • ¾ cup cocoa powder
  • 2 ½ cups powdered sugar
  • pinch of salt
  • 1 tablespoon vanilla
  • 4 large egg whites
  • 2 cups walnuts, chopped medium to medium fine

Directions
  1. Preheat oven to 350°
  2. In a large bowl, mix dry ingredients.
  3. Whisk vanilla and egg whites together.
  4. Slowly add egg whites to dry ingredients and mix with beaters on medium for four to five minutes or until batter thickens to the consistency of softly whipped cream.
  5. Fold in nuts.
  6. Using a small ice cream scooper drop batter onto buttered or parchment lined cookie sheet about 2” apart.
  7. After placing cookies in oven, turn temperature down to 320°. Bake for 10 to 13 minutes.
