Ingredients
  • 1/2 Cup of butter
  • 2/3 Cup packed brown sugar
  • 1-1/4 fresh peaches peeled, stoned and sliced (about 4 to 5 peaches - don't you dare open that can for this recipe!)
  • 1-1/2 Cups cake flour
  • 1-3/4 tsp. baking powder
  • 1/4 tsp salt
  • 1/2 Cup granulated sugar
  • 1 Egg beaten
  • 1/4 tsp almond extract
  • 1/3 Cup of milk

Directions
  1. Here we go, melt 3 tbs of butter in an oven proof skillet, I like my cast iron for this.
  2. Add the brown sugar and heat slowly on the stove top until sugar and butter are blended together.
  3. Arrange peaches in the skillet in a singel layer if possible, sometimes I have to overlap, in the butter and sugar mixture.
  4. Reduce heat to very low.
  5. In a separate bowl, sift in your flour with your baking powder and salt.
  6. In a separate bowl, cream the remaining butter and add in the granulated sugar, cream together.
  7. Add in the beaten egg until everything is light and fluffy, now its time for the extract to get in there.
  8. Take turns adding the flour mixture and the milk. You want to start and end with the flour though and beat well after each addition.
  9. Pour this batter over the peaches and bake it all in a 350 oven for about 40 minutes or until the cake springs back when you touch your finger to it.
  10. Cool for 10 minutes in the skillet and then turn it out onto a large serving plate or cake plate.
  11. Enjoy with freshly made whipped cream.

Do you have to use cake flour? What is the difference to regular flour?

This looks so incredibly good. Just know it will turn out well. Added the pictures. Waiting for it to cool completely will be a challenge.

Looks and sounds divine! ;')

Oh....this looks and sounds very yummy!!!!

Went peach picking over the weekend. OMG just made this and it if fabulous! I didn't have cake flour so I used regular flour, also had to substitute vanilla extract in place of the almond due to food allergies. So easy! this is definately a keeper!! thanks
