Ingredients
  • 2 pounds baking potatoes, peeled and cubed.
  • 1/4 cup milk
  • 3 tablespoons crumbled feta cheese
  • 2 tablespoons sour cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon pepper

Directions
  1. In a medium saucepan place potatoes, cover with water and bring to a boil.
  2. Cover potatoes, reduce heat, and simmer for 20 minutes or until potatoes are very tender.
  3. Drain potatoes well, and return to pan; beat at high speed with a mixer until smooth.
  4. Add rest of ingredients and beat well.

I bet this will be an excellent dish. I do enjoy cheeses added to potatoes but never thought of feta. Love feta so should also love this. Now on my list of dishes to try.

I was hesitating about adding the oregano...i have never been a huge fan and it can be overpowering...
but WOWEE...that just kicked up into a different place...

having it for dinner tonight with grilled pork ribs and a bitter green salad with a sharp vinaigrette...

almost like being on vacation in Greece...

Alterations


i substituted greek yoghurt for the sour cream and 1% milk for whole milk...

i also had something called 'greek oregano'...which i guess is different from italian oregano?...
anyway..so i used the greek one...

came out fantastic...
