Cream puffs filled caramel dessert

- Cream puffs dough: shopping list
- 1 c. water shopping list
- Pinch of salt shopping list
- 1/2 c. butter shopping list
- 2 tbsp. sugar shopping list
- 1 c. all-purpose flour shopping list
- 3-4 eggs shopping list
- 1 tsp. baking powder shopping list
- Filling: shopping list
- 1 cup sugar shopping list
- 1/4 cup butter shopping list
- ¾ cup heavy cream shopping list
- chocolate topping: shopping list
- 6 oz plain chocolate shopping list
- 2 tbsp butter shopping list
- ½ cup heavy cream shopping list
- 2 tbsp chopped hazelnut shopping list
- ¼ cup heavy cream whipped with 1 tbsp powder sugar shopping list
How to make it
- Cream puffs:
- Grease and flour a baking sheet. Combine water, salt, butter and sugar in a saucepan. Bring to a boil. Remove from heat. Add flour and baking powder all at once. Cook, stirring vigorously until mixture leaves sides of pan, about 1 minute. Remove from heat. Turn into a large bowl. Add eggs, one at a time, beating well after each addition until smooth and shiny. Let cool.
- Place batter in a piping bag with small round tube and pipe rounded amounts on a greased baking sheet. Bake on middle oven rack at 400 degrees for about 40 minutes. Make a slit on each immediately after baking. Let cool.
- Make filling:
- Heat sugar in a heavy saucepan until melted and brown color appears. Start adding butter on low heat, stirring constantly. Add heavy cream stirring again. Remove from heat and cool completely.
- Make chocolate topping:
- Heat heavy cream until simmering. Pour over chopped chocolate and stir until melted. Add butter and stir again. Cool.
- To assemble:
- Make a small hole in the bottom of each cream puff and fill it with caramel sauce. Dip each into chocolate mixture and place on a waxed paper to set. Sprinkle with chopped hazelnuts. Decorate a serving platter with whipped cream rosettes and arrange cream puffs. Drizzle the rest of the caramel sauce over the whipped cream in the platter.
