How to make it

  • Cream puffs:
  • Grease and flour a baking sheet. Combine water, salt, butter and sugar in a saucepan. Bring to a boil. Remove from heat. Add flour and baking powder all at once. Cook, stirring vigorously until mixture leaves sides of pan, about 1 minute. Remove from heat. Turn into a large bowl. Add eggs, one at a time, beating well after each addition until smooth and shiny. Let cool.
  • Place batter in a piping bag with small round tube and pipe rounded amounts on a greased baking sheet. Bake on middle oven rack at 400 degrees for about 40 minutes. Make a slit on each immediately after baking. Let cool.
  • Make filling:
  • Heat sugar in a heavy saucepan until melted and brown color appears. Start adding butter on low heat, stirring constantly. Add heavy cream stirring again. Remove from heat and cool completely.
  • Make chocolate topping:
  • Heat heavy cream until simmering. Pour over chopped chocolate and stir until melted. Add butter and stir again. Cool.
  • To assemble:
  • Make a small hole in the bottom of each cream puff and fill it with caramel sauce. Dip each into chocolate mixture and place on a waxed paper to set. Sprinkle with chopped hazelnuts. Decorate a serving platter with whipped cream rosettes and arrange cream puffs. Drizzle the rest of the caramel sauce over the whipped cream in the platter.
