How to make it

  • Preheat oven to 375. Cut tomatoes in half and spoon out flesh. Put flesh in a sieve set over bowl and press down to release juices; reserve. Season inside of tomatoes with salt and pepper;invert over a baking sheet lined with a kitchen towel.
  • Melt butter with 2Tbs oil in a skillet over low heat. Add onion and saute for 5 mins. Add garlic and saute 3 mins. Remove from heat. Stir in bread crumbs,herbs and parmesan. Stir in 1/4c of tomato juices'then egg.
  • Stuff tomatoes with breadcrum mixture. Grease a 9x13 baking dish. Place tomatoes in a dish in a single layer. Drizzle with 2 Tbs. oil. Bake for 30 mins,until topping is browned and crisp.

    This looks simply lovely. We were talking at dinner this evening about whether we preferred tomatoes cooked or 'raw'. I'm a raw fan but my son prefers them 'cooked'. Here's to the next recipe to try that with!

    Good flavor. Maybe could back off on the fat content a little without effecting the dish any.

    I made this tonight and it was very good. I omitted the chives because I was all out of them. I used plain store bought bread crumbs. I think I'll try the fresh kind next time, as stated in the recipe. The fresh herbs definitely adds alot of flavor to the stuffing.

    I always wanted to make stuffed tomatoes. I think I'll try this one. It sounds so good! Should we cut the tomatoes in half or just cut off the tops? Thanks! :)Update: I just put this on my menu for Monday.I can't wait!
