ANOTHER FAVE OF MINE TO SHARE WITH YOU ALL...WITH JUST THE RIGHT AMOUNT OF CHIPOTLE SEASONING, SAUTEED IN OIL AND SERVED WITH TANGY PAN SAUCE FOR DIPPING OMG!!

Ingredients
  • 4 BONELESS SKINNLESS CHICKEN BREAST CUT INTO 2 INCH MEDALLIONS
  • 1/2 TSP PAPRIKA
  • 2 TBPS CHIPOTLE MARINADE SEASONING
  • 1/2 TPS ONION POWDER
  • PINCH EACH OF SALT AND PEPPER
  • TWO TURNS OF THE PAN OF OLIVE OIL
  • DIPPING SAUCE:
  • 3 TBSP SOY SAUCE
  • 5 TSP LEMON JUICE
  • 1/4 CUP WATER OR CHICKEN STOCK
  • 1/2 CUP SOUR CREAM

Directions
  1. TOSS THE CHICKEN MEDALLIONS IN ALL OF THE DRY INGREDIENTS
  2. HEAT OLIVE OIL IN SKILLET AND SAUTEE MEDALLIONS UNTIL COOKED THROUGH ABOUT 6 MINUTES PER SIDE
  3. REMOVE MEDALLIONS FROM PAN AND KEEP WARM
  4. IN SAME SKILLET OVER SAME HEAT ADD SOY SAUCE, LEMON JUICE AND WATER TO DEGLAZE PAN SCRAPING UP ALL TASTY TIDBITS FROM BOTTOM
  5. ADD SOUR CREAM TO PAN AND WHISK UNTIL SMOOTH
  6. POUR SAUCE INTO DIPPING CUPS AND SERVE WITH CHICKEN
  7. YOU CAN ALSO MAKE LONG GRAIN RICE AND JUST POUR THE SAUCE OVER IT AND TOP WITH MEDALLIONS

Mmmmmm - flavors I love! I've printed if off and will make it soon...interesting dipping sauce, Julie - sounds very flavorful. I'll be sure to let you know how I do with it...thanks for sharing it!
