Eldorado Beef Casserole

- 1 & 1/2 pounds ground beef shopping list
- 1 med. onion, finely chopped shopping list
- 2 ribs of celery, finely chopped shopping list
- 3/4 t. garlic salt shopping list
- 1- 15 oz. can tomato sauce shopping list
- 1- 8 oz. can tomato sauce shopping list
- 1- 6 oz. can sliced black olives or 1 & 1/2 C. shopping list
- 1 C. sour cream shopping list
- 1 C. small curd cottage cheese shopping list
- 1- 4 oz. can diced green chilies shopping list
- 7 ounces tortilla chips slightly crushed shopping list
- 1/2 pound shredded monteray jack cheese, or 2 C. shopping list
How to make it
- Brown ground beef, and drain off fat.
- Stir in onion and celery.
- Saute 4-5 minutes.
- Stir in garlic salt, tomato sauces and olives till heated through.
- Remove from heat.
- In another bowl combine sour cream, cottage cheese, and chilies.
- Set aside 1/5 of chips.
- Layer 1/2 of remaining chips in bottom of buttered, 2 & 1/2 quart casserole dish or 13 x 9 pan.
- Top with 1/2 of meat mixture.
- Top with 1/2 of sour cream mixture.
- Sprinkle with half of the cheese.
- Repeat layers once.
- Sprinkle the top with the reserved chips and a little more shredded cheese.
- Bake at 350 for 30 - 35 minutes.
- We serve this with a little extra sour cream on top of each serving.

This sounds great! I love that it is easy and something that I would easily have all the ingredients any day of the week. Rates a "5" my friend. It seems kinda of like a mexican lasagna. Yummy. Thanks.
