Ingredients
  • 1 & 1/2 pounds ground beef
  • 1 med. onion, finely chopped
  • 2 ribs of celery, finely chopped
  • 3/4 t. garlic salt
  • 1- 15 oz. can tomato sauce
  • 1- 8 oz. can tomato sauce
  • 1- 6 oz. can sliced black olives or 1 & 1/2 C.
  • 1 C. sour cream
  • 1 C. small curd cottage cheese
  • 1- 4 oz. can diced green chilies
  • 7 ounces tortilla chips slightly crushed
  • 1/2 pound shredded monteray jack cheese, or 2 C.

Directions
  1. Brown ground beef, and drain off fat.
  2. Stir in onion and celery.
  3. Saute 4-5 minutes.
  4. Stir in garlic salt, tomato sauces and olives till heated through.
  5. Remove from heat.
  6. In another bowl combine sour cream, cottage cheese, and chilies.
  7. Set aside 1/5 of chips.
  8. Layer 1/2 of remaining chips in bottom of buttered, 2 & 1/2 quart casserole dish or 13 x 9 pan.
  9. Top with 1/2 of meat mixture.
  10. Top with 1/2 of sour cream mixture.
  11. Sprinkle with half of the cheese.
  12. Repeat layers once.
  13. Sprinkle the top with the reserved chips and a little more shredded cheese.
  14. Bake at 350 for 30 - 35 minutes.
  15. We serve this with a little extra sour cream on top of each serving.
