Ingredients
  • 1 small yellow onion, chopped (about 1/2 cup)
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 2 cans (16 ounces each) sliced white potatoes, drained
  • 2 ounces chopped reduced-sodium lean ham
  • 1/2 teaspoon black pepper
  • 2 tablespoons bread crumbs
  • 1/3 cup shredded reduced-fat Swiss cheese (optional)

Directions
  1. Preheat oven to 425°F. Spray a large nonstick skillet with vegetable cooking spray. Heat skillet over medium heat. Add onion. Cook, stirring, until golden, about 5 minutes. Add garlic and basil. Cook for 1 minute longer.
  2. Stir in potatoes, ham, and pepper. Place mixture in a medium casserole. Top with bread crumbs. Sprinkle with cheese.
  3. Bake until casserole is heated through and cheese melts, about 15 minutes. Serve immediately.
