Farmhouse Casserole

- 1 small yellow onion, chopped (about 1/2 cup) shopping list
- 2 cloves garlic, minced shopping list
- 1 teaspoon dried basil shopping list
- 2 cans (16 ounces each) sliced white potatoes, drained shopping list
- 2 ounces chopped reduced-sodium lean ham shopping list
- 1/2 teaspoon black pepper shopping list
- 2 tablespoons bread crumbs shopping list
- 1/3 cup shredded reduced-fat swiss cheese (optional) shopping list
How to make it
- Preheat oven to 425°F. Spray a large nonstick skillet with vegetable cooking spray. Heat skillet over medium heat. Add onion. Cook, stirring, until golden, about 5 minutes. Add garlic and basil. Cook for 1 minute longer.
- Stir in potatoes, ham, and pepper. Place mixture in a medium casserole. Top with bread crumbs. Sprinkle with cheese.
- Bake until casserole is heated through and cheese melts, about 15 minutes. Serve immediately.
