How to make it

  • Coat a large nonstick skillet with cooking spray; place over medium high heat until hot.
  • Add onion; cook for 5 minutes or until lightly browned.
  • Add chicken; saute each side 3 minutes or until browned.
  • Combine wine and next 8 ingredients in a medium bowl; stir well.
  • Add wine mixture to chicken; cover; reduce heat and simmer for about 20 minutes.

    This sounds like an easy, yet tasty dish. I would never, however, use a non-stick spray on my pans (sorry Pam) as the propellant leaves a residue that eventually cannot be removed. You are much better off taking a small amount of oil (if you are looking to be low-fat) and brushing the surface...or make your own spray with oil in a spray bottle.

    1. wine
    2. balsamic vinegar....we either have the synthetic vinegar or some fruit viegar

    I'm surprised to see this called French, since it is balsamic vinegar used. Could easily be Italian.

    I personally wouldn't use tomato paste, but probably milled tomato pulp without the juice. I just have a thing about tomato paste.
