Senagelese Chicken Yassa Recipe
Very tasty and very spicy chicken that is always a hit when I serve it. Enjoy

Ingredients
  • 1/4 cup fresh lemon juice
  • 4 large yellow onions diced
  • 1 habanera or 2 jalapeños seeds removed and minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 4 tablespoons canola oil
  • 2-1/2 pounds chicken breast diced

Directions
  1. Mix lemon juice, onions, chilies, salt, pepper and 2 tablespoons oil.
  2. Marinate chicken in mixture in refrigerator at least 1 hour.
  3. Heat skillet then add remaining oil and sauté chicken including marinade until onions soften.
  4. Serve over white rice.

This'd be great on kebabs too, using less onion in a larger chop.
