Tamale Pie Recipe
One day I saw this recipe and when I made it, the way the cheese melted into the corn bread as it was baking...I was hooked. I hope you like it .

Ingredients
  • 2 1/2 pounds lean ground chuck
  • 1 sweet onion, chopped up fine
  • 1 green pepper, chopped
  • 2 (14 1/2 oz) cans diced tomatoes
  • 3 tsp chili powder
  • 2 tsp salt
  • 2 (7 oz) packages corn bread mix (I use the Betty Crocker brand)
  • 1 (15 1/4 oz) can corn (drained)
  • 2/3 cup milk
  • 2 cups shredded cheddar cheese
  • your favorite salsa

Directions
  1. Brown ground chuck with onion & green pepper, drain well.
  2. Add tomatoes, chili powder & salt.
  3. Simmer for about 10 minutes.
  4. Pour into a 4 quart casserole dish.
  5. In a seperate bowl, stir together the corn bread mix, corn and milk just until moist.
  6. Spoon over the meat mixture then smooth out and then sprinkle with shredded cheese.
  7. Bake uncovered at 400 degrees for 30 minutes.
  8. Don't use finely shredded cheese.
  9. You can use up to 3 cups of cheese for topping if you like more cheese.
  10. Some like using their favorite salsa on this also.
