  • Coffee Cake:
  • 1 package active dry yeast
  • ¼ cup warm water (105-115º)
  • ¾ cup lukewarm walk (scalded, then cooled)
  • ½ cup margarine or butter, softened
  • 3 eggs
  • ¼ cup sugar
  • ½ tsp salt
  • 4 ½ - 5 cups all-purpose flour
  • Walnut Filling:
  • 2 ½ cups finely chopped walnuts
  • 1 cup packed brown sugar
  • 1/3 cup margarine or butter, softened
  • 1 egg
  • 2 tsps ground cinnamon
  • Glaze:
  • 1 cup powdered sugar
  • 1-2 Tbls water

Directions
  1. Coffee Cake:
  2. Dissolve yeast in warm water in large bowl.
  3. Stir in milk, margarine, eggs, sugar, salt and 3 cups of flour.
  4. Beat until smooth.
  5. Stir in enough remaining flour to make dough easy to handle.
  6. Turn dough onto lightly floured surface; knead until smooth and elastic, about 5 minutes.
  7. Place in greased bowl; turn greased side up.
  8. Cover; let rise in warm place until double, 1 – 1 ½ hours. (dough is rady if indentation remains when touched.)
  9. Punch down dough; divide into halves.
  10. Roll each half into rectangle, 15 x 12 inches, on lightly floured surface.
  11. Spread half the filling over each rectangle.
  12. Roll up tightly, beginning at 15 inch side.
  13. Pinch edge of dough into roll to seal well.
  14. Stretch roll to make even.
  15. With sealed edges down, coil into snail shapes on lightly greased cookie sheets.
  16. Cover; let rise until double, about 1 hour.
  17. Heat oven to 350º.
  18. Bake until golden brown, 35 – 45 minutes. Brush with margarine if desired; spread with Glaze.
  19. Walnut Filling:
  20. Mix all ingredients.
  21. Glaze:
  22. Mix 1 cup powdered sugar and 1-2 tablespoons water until smooth and of desired consistency.
