This looks good! Might be a way to sneak something healthy into my fry-happy hubbies diet.
Thanks!

Wow, love it. Do they turn out bitter at all? Do they end up fairly crispy?

This is perfect because I have an eggplant in my crisper drawer waiting to be prepared. I was looking for something different and I have never thought of making eggplant fries. Thanks so much TCPR for sharing your "5" fork recipe.

Hi tcpr,
Jalapéno means "from Jalapa" and is the name of a chile that originated there. I visited Jalapa, Mexico once and was delighted with the small town high in the mountains West of the Gulf port of Veracruz. When jalapénos are red ripe, they are dried and smoked; then named chipotle. Very hot indeed.
I arrived in Jalapa early one morning and was sitting drinking coffee in an outdoor cafe when I looked across the street to see a tiny, ancient mamacita sweeping the street in front of her door. While she swept, a cloud, we were high in altitude, enveloped her and she used her straw broom to fan away the cloud so she could finish sweeping. It was such a charming vision that I have never forgotten it.
