Lemon Fruit Parfaits

Ingredients
- 1 tablespoon cornstarch shopping list
- 1/2 c sugar shopping list
- dash of salt shopping list
- 1 1/4 cup milk shopping list
- 1 egg yolk, slightly beaten shopping list
- 2 tablespoon butter shopping list
- 1 teaspoon lemon zest shopping list
- 3 tablespoon fresh lemon juice shopping list
- 2 drops yellow food coloring shopping list
- mixed fresh fruits or drained can fruit cocktail shopping list
- vanilla ice cream shopping list
How to make it
- Combine frist 3 ingredients in 1 quart sauce pan; blend in milk.
- Bring to a boil, stirring constantly; cook and stir for 2 minutes.
- Remove from heat.
- Stir a small amount of hot mixture into egg yolk; stir egg yolk into hot mixture.
- Cook for 1 minute, stirring constantly.
- Add butter, lemon zest and lemon juice; stir until butter is melted.
- Stir in food coloring.
- Chill thoroughly.
- Arrabge layer of fruit in parfait glass; spoon on lemon sauce.
- Place ice cream on top of sauce.
- Repeat layers to fill glass ending with ice cream.
