Ingredients
  • 2-1/4 cups all-purpose flour
  • 1-1/2 cups sugar
  • 1 cup LAND O LAKES® Butter, softened
  • 1 (8-ounce) package cream cheese, softened at room temperature
  • 4 eggs
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons vanilla
  • 1-1/2 cups candied fruit mix
  • 1/2 cup chopped walnuts

Directions
  1. Heat oven to 350°F.
  2. Combine 1-1/4 cups flour and all remaining ingredients except candied fruit and walnuts in a large bowl.
  3. Beat at medium speed, scraping bowl often, until well mixed.
  4. Stir in remaining 1 cup flour, candied fruit and nuts by hand.
  5. Pour into 6 greased and floured mini (5 1/2x3-inch) loaf pans.
  6. Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean.
  7. Cool 10 minutes and remove from pans.
  8. Cool completely.
  9. TIP: 2 greased and floured 8 x 4 inch loaf pans can be substituted for mini loaf pans. Bake for 50 to 60 minutes.
  10. Makes: 48 servings of 6 mini loaves

I was looking for a fruit cake that wouldn't be too difficult or involved and this is perfect. Thanks so much. I'm a little bit late for Christmas but I'm making it for a New Years party.


Great recipe and especially since I love pound cake ;) Thank you so much for posting this recipe I just wish I had joined this group sooner and that way I could have made it at Christmas time. Oh well, there's nothing stopping me from making it now lol
